Shamrock Shortbread Cookie Recipe

Here is an easy cookie recipe to celebrate the Luck o' the Irish.
Ingredients:
1 C. Butter
1/2 C. Granulated Sugar
1/2 C. Powdered Sugar
1 Tsp. Vanilla
2 C. Flour
1/2 Tsp. Salt
3 Tbsp. Matcha Green Tea Powder
Steps:
  1. Preheat oven to 325 °
  2. Cream butter.
  3. Add sugars and vanilla.
  4. Mix well.
  5. Add dry ingredients.
  6. Roll out dough on flat surface.
  7. Use cookie cutters.
  8. Transfer cookies to baking sheet.
  9. Bake 8-10 minutes
  10. Remove from oven and cool.

Chewy Peanut Butter Bars

Ingredients:
  • 1/2 cup butter, cubed
  • 1/2 cup creamy peanut butter
  • 1-1/2 cups sugar
  • 1 cup all-purpose flour
  • 2 eggs, lightly beaten
  • 1 teaspoon vanilla extract

Directions:
  • In a microwave-safe bowl, melt butter and peanut butter; stir until smooth. Combine sugar and flour; gradually add to butter mixture and mix well. Beat in eggs and vanilla.
  • Spread into a greased 13 in. x 9 in. baking pan. Bake at 350 degrees for 45 minutes or until lightly browned and edges start to pull away from sides of pan. Cool on a wire rack. Yield: 2 dozen.

Snickerdoodle Bar Cookies

Ingredients:
  • 1 cup unsalted butter
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 1/2 teaspoon cinnamon
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 & 1/4 cups flour (self-rising)
  • cinnamon & sugar for dusting

Directions:
  1. Preheat oven to 350 degrees
  2. Beat together sugars and butter until fluffy
  3. Add cinnamon, vanilla and eggs
  4. Mix in flour until just combined
  5. Grease 9" by 13" baking pan
  6. Spread cookie batter into pan
  7. Bake for 30 to 35 minutes or until top is golden brown
  8. Remove from oven and dust with cinnamon & sugar mixture

Lemon Shortbread

Ingredients:
1 Cup Butter
1 Cup White Sugar
Pinch Salt
2 Tsp Fresh Lemon Juice
2 Tbsp Lemon Zest
2 Cups Flour


Directions:
  1. Preheat oven to 325 degrees.
  2. In a large bowl, cream butter and sugar with mixer.
  3. Add salt.
  4. Mix in lemon juice and lemon zest.
  5. Scrape sides of bowl.
  6. Add flour and mix thoroughly.
  7. Press dough into greased cookie sheet or pan.
  8. Bake for 30 minutes then poke dough with fork.
  9. Continue baking for 20 to 30 minutes or until edges brown.

Raisin Sugar Ribbons

Ingredients:

Cookie Crust:
1 1/2 cups flour
1 cup packed brown sugar
1 1/2 cups oats
1/4 teaspoon salt
3/4 cup butter

Filling:
2 cups golden raisins
1 cup sugar
1 tablespoon cornstarch
1 cup water
2 tablespoons lemon juice
Directions:
  1. Pre-heat oven to 375 degrees.
  2. Combine flour, sugar, oats and salt in a mixing bowl. Cut in butter. Pat half of the mixture into bottom of 9 x 13 pan. 
  3. In a saucepan combine the raisin, sugar and cornstarch. Stir in water and lemon juice. Bring to boil; cook and stir until thick and bubbly. Spread over oat cookie crust in pan.
  4. Sprinkle remaining flour crumb mixture on top of filling.
  5. Bake for 20 to 25 minutes until edges brown.
  6. Cool and cut into bars
