1 Cup Butter
1 Cup White Sugar
2 Tsp Fresh Lemon Juice
2 Tbsp Lemon Zest
2 Cups Flour
- Preheat oven to 325 degrees.
- In a large bowl, cream butter and sugar with mixer.
- Add salt.
- Mix in lemon juice and lemon zest.
- Scrape sides of bowl.
- Add flour and mix thoroughly.
- Press dough into greased cookie sheet or pan.
- Bake for 30 minutes then poke dough with fork.
- Continue baking for 20 to 30 minutes or until edges brown.
